The menemen omelette has in common with the Spanish omelette the use of eggs, although it differs by not using potatoes and by using several ‘extras’ that make it not only different and original, but also very tasty. It is a simple and very typical dish, especially at breakfast time at the Turkish table.

Ingredients for 2 persons

  • 4 eggs
  • 30 g green pepper
  • 2 ripe tomatoes
  • 1 medium onion
  • 2 tablespoons parsley
  • 5 tablespoons olive oil
  • 1 teaspoon pepper and salt

Preparation

Prepare the menemen omelette, starting by peeling and finely chopping the green pepper and onion.

Fry them in olive oil in a frying pan until soft. Then peel the tomatoes and cut them into small cubes, and add them to the fried mixture. Then fry everything for 5 minutes over a low heat.

Beat the eggs, add the pepper, salt and parsley, and pour the mixture over the fried mixture. Fry the mixture in the frying pan for approximately one more minute, and your delicious menemen omelette or ‘Turkish omelette’ is ready to serve.
