Potato börek

Börek is a kind of pie or pastry that is part of the gastronomy of Turkey and other countries that were part of the Ottoman Empire. It is made of filo pastry and can be filled with meat, spinach, cheese… And also potatoes!

Ingredients for 4 people

  • 3 medium potatoes to cook
  • 300 g filo pastry
  • 1 medium onion
  • 2 small tomatoes
  • 2 eggs
  • 150 g grated Emmenthal cheese
  • 100 g beef jerky
  • 6 tablespoons parsley
  • 6 tablespoons olive oil
  • 100 ml. milk
  • 1 teaspoon pepper and thyme
  • Sesame
  • Salt

Preparation

Wash the potatoes and boil them in a saucepan over a low heat for 15 minutes, until they are soft. Then peel and grate them.

Wash and peel the onion and tomatoes and cut them into small squares. Wash the parsley and chop finely.

Put the grated potato, grated Emmenthal cheese, tomatoes, parsley, pepper, thyme and salt in a bowl and mix together. Set aside.

Put 100 ml. of milk, 6 tablespoons of olive oil and 2 eggs (separating one of the yolks for basting) in a deep dish and beat well. This mixture will be used to spread on each sheet of filo pastry.

From the potato mixture that you prepared earlier, put a couple of spoonfuls of this dough on each sheet of filo pastry and wrap it in the filo pastry, giving it the shape you want (triangle, square, circle, heart, rose, etc. etc.). Now you have a börek.

When they are all done, spread the egg yolk on top, and sprinkle with sesame and/or grated Emmenthal cheese, as you like.

Preheat the oven to 200 ºC. Place baking paper on the baking tray to prevent them from sticking, and bake for 30-40 minutes until the böreks are golden brown on top.

Wait about 15 minutes for the böreks to cool slightly before serving. Place the böreks on a plate with slices of cecina, seasoned with olive oil and thyme
