Tahinli çörek is a type of traditional Turkish bun or çörek with tahini. We are going to show you how to prepare this delicious Turkish dessert typical of Central Anatolia, which has many possible varieties and presentations.
Ingredients (for 18 pieces)
For the dough:
- 500 g sifted wheat flour
- 1 teaspoon salt
- 25 g fresh yeast
- 2 tablespoons sugar
- Half a glass of olive oil
- Half a glass of milk
- 1 plain yoghurt
- 1 egg
For the filling:
- 1.5 cups of tahini (sesame puree)
- Half a glass of ground walnuts
- 2 tablespoons olive oil
- Half a cup of sesame seeds (optional)
- Half a cup of sugar (if you like it sweeter, add half a cup of sugar more)
Preparation
Sift the flour with the salt and place it in the form of a volcano. Add the yeast with a little warm water and sugar. Then add the olive oil, milk, yoghurt and egg.
Knead this dough for about 5 minutes until it is ready, neither too hard nor too soft. Then leave it covered for an hour.
To prepare the filling, mix the tahini, sugar, sesame and walnuts in a bowl.
After having waited for an hour, take the dough that you had prepared at the beginning and separate it into about 6 portions, and flatten each one with a rolling pin into a cake about the size of a serving plate.
Fill each cake with the tahini mixture you had made.
Place each cake on top of each other to make 3 groups, and fold each one like an envelope.
When everything is ready, take each group again – starting with the one you prepared first – and open it again with a rolling pin until you have a cake the size of a serving plate. Cut the dough into 6 lengthwise pieces, and then form a rose as shown in the picture. Now, you have a pide.

Place each pide (‘çörek’ in Turkish) on a baking sheet and when they are all done, spread a little olive oil on top and sprinkle with sesame seeds.
Preheat the oven to 180 ºC, and bake them until they are golden brown on top. Wait about 10-15 minutes for them to cool a little before serving.
