Double crunchy chocolate truffles with Physalis

The Physalis is a genus of plants that grows in warm, subtropical regions all over the world, characterised by a small, yellowish, orange fruit that has excellent nutritional qualities: high in minerals, fibre, and vitamins A and C, low in calories, and very good for strengthening the immune system and lowering cholesterol, among other characteristics.

Considered as an exotic fruit, the Physalis fruit is used in the elaboration of jams, ice creams, and usually in confectionery, or simply as decoration. Here is a recipe for crunchy chocolate truffles.

Ingredients for 16 truffles

  • 150 g milk chocolate
  • 50 g cream
  • 10 g honey
  • 5 grated physalis
  • 1 pinch of salt

For the bath

  • 100 g dark chocolate
  • cocoa powder

For the filling

  • Roasted walnuts

Preparation

Heat the cream with the honey and the grated physalis.

Chop the milk chocolate and pour it into the hot cream and stir until the chocolate is melted.

Leave to cool in the refrigerator until the mixture has a solid texture.

After it has cooled, take a teaspoon of this chocolate and put a small piece of toasted walnut inside it, and mould it into small balls.

For the bath, melt the chopped dark chocolate in a Bain Marie and cover the balls with the chocolate.

Leave them to cool and coat them with cocoa powder.

Leave in a cool place and serve.
