This is not the first time that we show you recipes with börek, one of the most popular elements of Turkish cuisine , basically consisting of a stuffed filo pastry dough. Traditionally this filling is meat, cheese or some vegetables; but this time, we are going to fantasize a bit with the ingredients and prepare a special börek filled with chicken, rice and Emmental cheese.
Ingredients (for 4 persons)
- 400 g chicken (breast or any other part), finely cut into pieces
- 70 g rice (washed with water)
- 30 g of fine noodles
- 250 g of filo pastry
- 30 g peas
- 2 carrots
- 100 g Emmental cheese (approx. 6 portions)
- 1 egg yolk
- 1 chopped garlic clove
- 3 tablespoons chopped parsley
- 3 tablespoons of olive oil
- 1 tablespoon butter
- 3 tablespoons lemon juice
- Salt, oregano, ground black pepper and sesame seeds
- 1 tomato for garnish
Preparation
Put a tablespoon of oil and the fine noodles in a saucepan and fry until golden brown. Add the rice and stir the mixture for about 2 minutes until the rice is also browned.
Then add salt, a pinch of sugar, butter, lemon juice and water (half a cup in this case). Let it cook on a medium heat until all the water evaporates. Once all the water has evaporated, turn off the heat and put the pot away.
Cut 2 carrots and fry them with a tablespoon of oil for about 2 minutes. Mix with peas and a clove of chopped garlic. Fry for another minute and set aside.
Clean the finely chopped chicken, add a tablespoon of oil, oregano and ground black pepper and mix well. Fry until the chicken is golden brown.
Then add 3 portions (50 g) of Emmental cheese to the fried chicken, a little salt, and mix for a minute in the frying pan over a low heat.
In a separate frying pan, add another 3 portions of Emmental cheese and heat it over low heat for one minute. Add the rice we made earlier together with the mixture of carrots, peas and chopped garlic, and mix everything together for one minute over low heat.
Grease a baking dish with a little oil. Place half of the filo pastry sheets in the bottom of the dish, and pour the mixture of rice, chicken and parsley on top. If desired, top with a little more Emmental cheese.
Once the mixture has been poured, place the other half of the filo pastry sheets on top, and spread the egg yolk on top; finally sprinkle with sesame seeds, and if you wish, you can cut the pastry into shapes.
Preheat the oven to 180 ºC. Place the dish in the oven and heat for about 30 minutes until the filo pastry is golden brown on top. Leave to cool slightly and serve the dish decorated with chopped tomatoes.
