Fava (mashed dried beans)

In Turkey it is common to eat a variety of starters before the main course. One of the most popular, which you can probably find in any restaurant, is fava, a kind of cream of dried beans spread on bread and accompanied with a drizzle of olive oil.

Ingredients (for 12 people)

  • 500 g dried broad beans
  • 350 g of fresh broad beans
  • 1 large onion
  • 3 potatoes
  • 1 glass of virgin olive oil
  • ½ glass of vegetable oil
  • 8 glasses of water
  • 1 dessert spoon of salt
  • 4 dessert spoons of sugar
  • Chopped dill

Preparation

Soak the dried broad beans in water overnight. Peel and chop the onion. Peel and dice the potatoes. Sauté onion and potatoes in vegetable oil; remove and drain. Put them in a saucepan; add the drained dried beans, salt, sugar and olive oil.

Pour in the water, cover and cook over a medium heat, stirring from time to time, until soft. Leave to cool slightly and pass through a sieve; pour into a bowl or mould and place in the fridge. Finally pour into a serving dish. Garnish with chopped dill and serve with lemon slices.
