Who doesn’t like chocolate? Well, if we add an extra touch to some buns made with flour and cocoa by adding a chocolate cream filling… The result is delicious and ideal for children to enjoy … and not so children!
Ingredients for 14 buns
- 450 g of strong flour
- 50 g pure cocoa powder with 0% added sugars
- 10 g cinnamon powder
- 300 ml warm milk
- 50 g sugar
- 100 g butter (at room temperature)
- 30 ml olive oil
- 5.5 g baker’s dry yeast
- 2 eggs
- 5 g salt
For filling and decoration:
- 200 g 70% dark chocolate for desserts
Preparation
Mix all the liquid ingredients in a bowl: the warm milk, sugar, salt, eggs, butter and olive oil, and stir everything well.
In another bowl, sift the flour with the cocoa, cinnamon and baking powder. Make a well in the centre and add the liquid ingredients.
Mix everything well and knead for about 15 minutes until the dough is homogeneous, smooth and elastic, then cover it with a cloth and leave it to rest for about half an hour, until it doubles in volume.
After this time, place the dough on a floured surface and knead it a little to remove the air.
Weigh and form the dough into balls, each weighing approximately 80 g, so that you have about 14 balls.
Place them on baking paper on a baking tray and leave the balls to rest for about half an hour.
Turn on the oven and preheat it to 220 ºC.
Bake the buns for 10 minutes, then lower the oven temperature to 200 ºC and bake for a further 5 minutes.
Remove the buns from the oven and leave them to cool.
Finally, melt the chocolate in a ‘bain-marie‘ in a bowl. Fill the buns with this chocolate, using a piping bag with a small round nozzle. Then, decorate the buns with this chocolate by pouring it over the top.
Note: if you want the chocolate filling to be softer, prepare a ganache with cream. To do this, crush 300 g of dark chocolate in a bowl and heat 200 ml of whipping cream in a saucepan. When the cream comes to the boil, pour in the chocolate and mix well. When the ganache is lukewarm, fill the piping bag to fill the buns with it.
