Ezogelin soup

Ezogelin soup is one of the best known traditional soups in Turkey. Its name comes from a Turkmen woman who once lived in a village in Gaziantep and who, according to the story, after falling ill made a soup to cure herself that people liked so much that they named the recipe after her.

The basic ingredients are red lentils, bulgur, rice, tomato sauce, onion and dried mint. It is a very nutritious and healthy soup that is usually eaten especially during the winter months.

Although originally a homemade soup, today this soup is also found on the menu of many restaurants all over Türkiye.

Ingredients for 8-10 persons

  • 1 glass (180 g) red lentils
  • 4 tablespoons (60 g) bulgur
  • 2 tablespoons (30 g) rice
  • 4 tablespoons (4 g) olive oil
  • 1 onion, finely chopped
  • 4-5 cloves garlic, chopped
  • 2 tablespoons tomato sauce
  • 1 teaspoon pepper and salt
  • 9 glasses of beef or chicken stock (if not available, make with water)
  • 1 teaspoon pepper
  • Salt

For the sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 2 tablespoons dried mint
  • 1 teaspoon hot paprika
  • 1 teaspoon cumin
  • Juice of one lemon

Preparation

Put the onion in a pan with olive oil and fry it for 5 minutes. When the onion becomes transparent, add the garlic and fry for another minute. Add the tomato sauce and fry for another 2 minutes.

Add the lentils, rice and bulgur, previously washed. Fry for a minute and add the stock, salt and pepper. Stir everything together and simmer for approximately 30 minutes.

To make the sauce, put the olive oil and flour in a saucepan.

Stir everything over a low heat until the flour has turned a slightly brown colour. Add the spices and pour this sauce into the soup, and continue stirring.

Finally add the lemon juice. If you like, you can serve the soup in a soup bowl, sprinkling it with hot paprika and dried mint.
