Chickpeas with bulgur

We are going to show you how to prepare a typical Turkish dish based on chickpeas and ‘bulgur’, a food made from wheat that is very common in Mediterranean and Middle Eastern cuisine.

Bulgur’ is a word of Turkish origin that gives its name to a food made by cooking the grains of wheat and is very common in various dishes from the Middle East, the Maghreb and the Balkans, although it can also be found in Indian cuisine under the name of ‘Dalia’.

Ingredients for 4 people

  • 200 g chickpeas
  • 200 g minced meat
  • 100 g bulgur
  • 1 onion
  • 1 red pepper
  • 150 ml olive oil
  • 3 tablespoons tomato sauce
  • 5 tablespoons lemon juice
  • 1 teaspoon pepper
  • Fresh parsley
  • 2 teaspoons salt
  • 200 ml hot water

Preparation

Put the chickpeas in a saucepan with water. Cover and wait for a day.

The next day, put the chickpeas in a pot and simmer them for 20 minutes until they are a little soft.

On the other hand, peel and chop the onion and red pepper. Next, prepare a pot with olive oil in which you will fry the chopped onion and red pepper. When the onion and red pepper are cooked and transparent, add the minced meat and fry for about 5 minutes.

Then add the tomato sauce and bulgur and fry for a further 5 minutes.

Finally add the chickpeas, pepper, salt, lemon juice, hot water and mix well, leaving it for about 15 minutes over medium heat.

When it comes to the boil, continue cooking over a low heat for 30 minutes.

Serve on a plate and sprinkle with parsley and pepper.
