Börek with filo pastry

Börek is a stuffed pastry that looks a bit like the Cornish pasty, although the dough used is different and there are different types, ranging from thin dough like a leaf to thicker ones.

The filling also varies from area to area, and each region of Turkey has its own variety; for example, in the Aegean area, börek is filled with more vegetables, while in central and eastern Anatolia , more meat is used. Other ingredients such as cheese, potatoes, etc. can also be included in the stuffing.

It is a very typical meal in Turkey as a breakfast or snack, or as an accompaniment to any dish, and there are even shops in the country that sell only börek varieties.

This recipe with filo pastry that we show you below is one of the easiest ways to prepare börek.

Ingredients

  • 450 g filo pastry
  • 1 tablespoon sesame seeds

For the filling:

  • 300 g of minced beef
  • 1 onion
  • 4 tablespoons tomato sauce
  • 4 tablespoons olive oil
  • 4 tablespoons freshly chopped parsley
  • 1 teaspoon thyme and salt

For dipping the filo pastry:

  • 150 g melted butter

Preparation

To prepare the filling, peel, wash and chop the onion, then prepare a frying pan with olive oil and fry the chopped onion in it.

When the onion is cooked and transparent, add the minced meat and fry for about 5 minutes. Then add the tomato sauce and fry for a further 2 minutes.

Finally, wash the parsley and chop finely; add the parsley and salt to the meat, mix well and leave to cool.

Put the melted butter in a deep dish. Use this butter to spread on each sheet of filo pastry.

Prepare three layers of filo pastry, one on top of the other, spreading the two lower ones on top with the melted butter, and leaving the last one ungreased; put a couple of spoonfuls of this mixture on top of the last ungreased layer, and make a roll with the three layers, wrapping the meat with the filo pastry.

When you have prepared all the filo pastry rolls, cut them with a knife into pieces of about 3 cm. in size, and spread egg yolk over them, sprinkling a few sesame seeds on top.

Preheat the oven to 180 ºC. Place baking paper on the baking tray to prevent them from sticking, and bake the börek for 15-20 minutes until golden brown on top. Wait about 5 minutes for them to cool slightly before serving.
