Cauliflower with minced meat (kıymalı karnabahar) is a very typical Turkish dish which is eaten usually in the cold months, especially in winter. It is also sometimes made without minced meat. It is a very popular dish that is made in homes all over the country and is very nutritious.
Ingredients for 4-6 people
- 800 g cauliflower
- 300 g minced meat
- 1 chopped onion
- 2 tablespoons of tomato sauce
- 1 chopped carrot
- 100 ml olive oil
- juice of one lemon
- 4 or 5 cloves of garlic
- 2 glasses of hot water
- parsley, pepper and oregano
- Salt
Preparation
Separate the cauliflower florets and cook them in a pot with a spoonful of salt and half a lemon juice for approximately 12 minutes. Then drain and wash them in cold water.
In a separate pot, put the onion and carrot in olive oil and fry them for about 4 minutes; then add the minced meat and continue frying until the meat is well done.
Then add the tomato sauce and fry for another 2 minutes or so. Then add the cauliflower sprigs that you had cooked separately and the garlic cloves, and stir a couple of times.
Finally add the remaining lemon juice, parsley, pepper, oregano and salt; finally add the hot water, and leave to cook over a high heat until it comes to the boil, then simmer until the cauliflower is sufficiently tender, but without falling apart.
Leave to stand for about 10 minutes, and serve the cauliflower with minced meat, sprinkling chopped parsley on top.
