Carrot yoghurt

This simple recipe made with yoghurt and carrots can be enjoyed either hot or cold, and serves as an appetiser or a delicious side dish for a main course.

Ingredients for 4 people

  • 4 plain yoghurts (unsweetened, preferably Greek-style)
  • 1 kg carrots
  • 4 cloves of garlic
  • half a glass of olive oil (200 ml)
  • a bunch of parsley
  • 2 teaspoons of salt

Preparation

First, wash the carrots thoroughly and grate them, setting them aside on a serving plate.

Then heat a frying pan and add the olive oil. Add the grated carrots and stir, taking care not to burn them. Continue stirring the carrots for about 20 minutes over low heat, or until they are golden brown and the water has evaporated.

Next, mix the yoghurt, salt and finely chopped garlic together well in a bowl. This is the sauce.

Serve the carrots that you fried earlier in the frying pan on a plate, pour the sauce over them and garnish with parsley. This dish can be enjoyed either hot or cold.
