Shish kebab lamb

Shish kebab (in Turkish şiş kebap) is a typical Turkish cuisine dish consisting of a metal or wooden skewer, usually with small pieces of various types of meat inserted (with or without vegetables), which is cooked on a grill. In this case, we are going to make it with lamb.

Ingredients for 4 people

  • 1 kg lamb leg (cut into 2-3 cm cubes)

Optional ingredients

  • 12 whole spring onions
  • 8 whole cherry tomatoes
  • green and red peppers

For the marinade

  • 2 cloves of garlic
  • 1 tablespoon of tomato sauce
  • 4 tablespoons of olive oil
  • 2 tablespoons of natural yoghurt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper
  • 1 teaspoon thyme

Preparation

Place all the ingredients for the marinade in a glass dish. Add the lamb cubes and mix together. Leave to marinate for at least 3-4 hours, or overnight so that it is ready for the next day.

Before grilling the meat cubes, thread them onto metal skewers, or if this is not possible, use wooden skewers. You can also add some of the optional ingredients, such as tomato, onion or pepper.

Next, grill the meat cubes in a low-heat oven for about 10 minutes. Turn them over until the meat is golden brown, and just before removing them from the oven – about two minutes before – add the salt.

Serve the kebabs on a plate with onion and mixed salad, rice, and some pita bread.
