Köfte soup with yoghurt

Köfte soup or Turkish meatball soup (köfte çorbası) is a soup made with meatballs simmered with other ingredients such as yoghurt. It is a very nutritious soup and perfect for winter.

Ingredients for 4-6 persons

  • 300 g of minced beef
  • 1 medium onion
  • 30 g rice
  • 1 carrot
  • 30 g red pepper
  • 400 g natural yoghurt
  • 1 egg yolk
  • 1 lemon for juice
  • 6 tablespoons olive oil
  • 1 tablespoon dried mint
  • 2 tablespoons wheat flour
  • 1 teaspoon pepper and thyme
  • 800 ml hot water
  • Salt

Preparation

Put the minced meat, the rice (well washed), the onion (well chopped), all the spices (except the mint) and the salt in a bowl and mix well to make a homogeneous paste.

With the resulting mixture, make small balls, each smaller than the size of a walnut. Then roll the balls in the flour and leave in the fridge for about 20 minutes.

On the other hand, wash and chop the peppers and carrots. Then prepare a pot with a little olive oil in which you will fry the chopped carrot. Then add the red pepper, and fry everything for about 5 minutes until the carrot is very soft; add hot water, and leave for about 10 minutes over medium heat.

After 10 minutes put it on low heat and add the balls to this water, letting it boil for about 15 minutes.

In the meantime, prepare a yoghurt sauce. To do this, beat the egg yolk with the yoghurt and lemon juice; then add about 2 tablespoons of hot water to the mixture, and the sauce is ready.

Gradually pour the yoghurt sauce into the pot with the soup you have prepared, mixing well. Finally, add the mint and it is ready. It can be served hot or warm.
