Rice with pumpkin

Rice with pumpkin is prepared in several regions of Turkey in different variations, although it is especially known as a dish more typical of the Black Sea region.

Basically, it is a dish consisting of pumpkin and rice, although depending on the area and the cook, additional ingredients may be used, such as onion or sultanas, various spices, and sometimes sugar is sprinkled on top of the rice.

The recipe below is a homemade version, although the spices can be changed. It is a dish that goes very well with meat.

Ingredients (for 4 people)

  • 1 glass of rice
  • 300 g pumpkin (peeled, cleaned and chopped)
  • 1 chopped onion
  • 4 tablespoons pine nuts
  • 4 tablespoons sultanas
  • Juice of half a lemon
  • 4 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 and a half cups of hot water (poultry or beef stock if possible)

Preparation

Fry the onion and courgette in olive oil until the onion is soft and transparent. Wash the sultanas, add them to the mixture and stir everything together; then wash the rice and add it to the mixture.

Add the hot water and stir a couple of times. Continue stirring the mixture for about 2 minutes with a wooden spoon, and then add the butter, salt and lemon juice. Leave it to cook for 3-4 minutes over a medium heat, and then simmer until all the water has evaporated.

Once ready, turn off the heat and after removing the pan, add the spices and mix everything together. Place a sheet of kitchen paper over the rice and cover it with a lid for about 10 minutes, leaving it to rest.

Finally, place the rice on a serving dish and sprinkle the pine nuts on top; to prepare them, fry them in a frying pan with a teaspoon of olive oil until they change colour.
