A scientific milestone has made it possible to create eggs and meat completely free of animal protein using a 3D printer, a breakthrough that is expected to be especially useful for people with limited protein intake, made possible through a collaboration between Dr Tuba Eminoğlu of Ankara University‘s Department of Paediatric Metabolic Diseases, and Kezban Candoğan, a professor at the university’s Department of Food Engineering.
Speaking to the media, Eminoğlu stressed the importance of this achievement not only for Turkey but for the whole world, as it will make it possible to provide low-protein alternatives for patients with hereditary enzyme deficiency who cannot digest protein-rich foods such as meat, milk or eggs. A total of 20 patients have already been able to try the 3D-printed meat and eggs, with very positive results. In addition, natural ingredients have been used to give these foods a consistency similar to that of jelly beans, and avoid the rejection of bitter-tasting amino acids in children with this condition.
